Fruit Pizza


I found this recipe many years ago
when I lived in the mountains of
British Columbia.



I fell in love with it!



I think the first time I made it I used
Kiwi, strawberries and cantaloupe.

Since then I've made it with halved
grapes and honey dew melons...
you can use any in season fruit
and it will be
delicious!

Here's the recipe.

Fruit Pizza

Crust
1 1/4 C flour
1/3 C brown sugar
3 TBSP icing sugar
2/3 C softened butter

Mix all 4 ingredients together in a bowl
until it forms a ball. Press on the bottom
of a regular sized pizza pan.
Bake 350' for about 10-15 minutes
or until golden brown. Cool.

Topping
1 package of cream cheese softened
1/2 C sugar
1 tsp vanilla

Beat all 3 ingredients together.
Spread over cooled cookie crust.

Arrange any kind of fruit you like
on top in a circle.

Glaze fruit using a prepared glaze or
make your own using:
1/4 C apricot Jam or Marmalade
mixed with 1 TBSP of water.
Mix well and rub through a sieve.
Brush all over the fruit.

Chill Fruit Pizza before cutting into wedges
with pizza cutter.

This looks mouth watering delicious. Fruit desserts are my all time favorite and I try to use fruit when ever I can. It seems I will be making this dessert when the blueberries are in season. Thank you!!

Oh my! My mouth is watering LOL
I've never made one, but have eaten it. The only difference was that the crust was made with that sugar cookie dough you buy in the "tube".
May have to make one to take to my friend's house this weekend - thanks for the idea & the recipe!

Maura, that looks delicious. I am going to copy it and add it to my personal cook book. Today is the last day for local strawberries to be sold at stands in our little town. I've eaten fruit pizza, it also had kiwi and strawberries, and was delicious.

Hi Maura, I came to visit as I said I would. In reading through I realized that in many things, we are almost exact opposites!! You're country, I'm city...you cook, I eat out....you're cats, I'm dogs....you're domestic, I'm NOT....you're a gardener, I have silk plants inside and weeds outside.... you have a lot of animals, I no longer even have one....you do lots of photos, I always have to apologize for mine...you have several children, me, only one....and the list goes on!

We'll probably turn out to be best friends!! LOL!!! I'm now a follower!
