Simon & Garfunkel In My Garden


Well ok maybe Simon and Garfunkel
aren't in my garden
but
parsley, sage, rosemary and thyme are!


I used a few sprigs of rosemary
to make some
Rosemary and Garlic Oil.
 

I love this on toasted Ciabatta buns.



I just put a few sprigs of rosemary
and 4 cloves of garlic 
into a cruet
and then fill with 
good extra virgin olive oil.

Put on the lid and store in the fridge.

YUMMY!


This should be used up within a week.

in the foundation of
an old grain bin.

I filled in a few empty spots with 
some leftover
strawberry plants
and rhubarb which I didn't take a photo of.

Fruit Pizza


I found this recipe many years ago
when I lived in the mountains of
British Columbia.



I fell in love with it!



I think the first time I made it I used
Kiwi, strawberries and cantaloupe.

Since then I've made it with halved
grapes and honey dew melons...
you can use any in season fruit
and it will be
delicious!

Here's the recipe.

Fruit Pizza

Crust
1 1/4 C flour
1/3 C brown sugar
3 TBSP icing sugar
2/3 C softened butter

Mix all 4 ingredients together in a bowl
until it forms a ball. Press on the bottom
of a regular sized pizza pan.
Bake 350' for about 10-15 minutes
or until golden brown. Cool.

Topping
1 package of cream cheese softened
1/2 C sugar
1 tsp vanilla

Beat all 3 ingredients together.
Spread over cooled cookie crust.

Arrange any kind of fruit you like
on top in a circle.

Glaze fruit using a prepared glaze or
make your own using:
1/4 C apricot Jam or Marmalade
mixed with 1 TBSP of water.
Mix well and rub through a sieve.
Brush all over the fruit.

Chill Fruit Pizza before cutting into wedges
with pizza cutter.

Down To Earth Granola

Lizzy likes Down To Earth Granola too!

I can't remember where I found this version of home-made
granola but I have been making
it for about 10 years now.

You can change it up and use what ever
dried fruit you like.
It calls for raisins but this time I added dried
cranberries too. I like it!

I also added about 1/4 cup of
milled flax seed this time for more fiber etc.

Mixing in the fruit after baking

Down To Earth Granola

15 min Prep time 40 min baking time

4 C Old Fashioned Oats
1 1/2 C sliced almonds or crushed pecans or other nut
1/2 C packed brown sugar
1/2 tsp salt
1/2 tsp cinnamon

Preheat oven to 300'F
Mix these ingredients together in large bowl.
In small saucepan warm;

1/4 C veg. oil (I used olive oil)
1/4 C honey

When warm whisk in;

1 tsp Vanilla

Carefully pour liquid over oat mixture.
Stir gently until well mixed.
Spread on a 15X10X1" pan (jelly roll or rimmed cookie sheet).
Bake 40 minutes stirring carefully every 10 minutes.

When done place pan on rack and let cool completely.

Add  1 1/2 C raisins and/or dried cranberries.
Stir.

Store in self sealing plastic bag at room temperature for 1 week or 3 months in freezer.

Makes 9 cups     24 servings.
